So, follow these simple instructions to learn how to switch between upper case and lower case letters in iOS: Open Settings and go to Accessibility. Tap on Keyboards under the Physical and Motor section. Toggle off the option that says Show Lowercase Keys.

To do what you want, you need to go to settings/general/keyboard and turn off auto-capitalization. Then you can start a sentence without a capital.
